I want to make a handbook of global food based on how good tofu is in each place (tofu is not a strictly vegetarian thing in many places that eat it natively)

Variety of tofu types, number of homemade tofu places, how many restaurants serve tofu, how many types of prepared dishes, in how many cuisines, skills of tofu makes and chefs…

.. I’ve probably eaten thousands of tofu dishes and I love them all.

The state of tofu in some places make me so sad

The Mecca of tofu (and mushrooms) is probably Yunnan

I feel like anyone who says ‘I don’t like tofu or mushrooms’ could probably like the stuff in Yunnan

They take it to a whole other level. Sadly there aren’t that many Yunnan places

But this video is incredible

Sorry for the *stack, but Hannah Che is doing important work writing about mushrooms, tofu and vegan food culture in Yunnan

(Although tofu isn’t only for vegans in China, she focuses on that)

The book The Mushroom at the End of the World talks about Yunnan’s role in global mushroom diversity

Hannah Che has a great recipe for a tea brined tofu, which is one of my fave dishes

Just cooking savory food with tea is one of my fave things to do

Tea-Brined Tofu 茶香干

I genuinely believe one of the best ways to learn about Japanese food is to read the Oishinbo manga

Or watch the videos

(This is about tofu)

@skinnylatte I've always loved that food anime/manga is its own genre with people getting extremely excited about food and describing the preparation and the taste

right now I'm following one called "maid just eats" which is about a maid going around and eating random food in Japan

@skinnylatte weird coincidence another anime I'm watching rn answered a question I had about the one you posted
@skinnylatte have you had chole braised with black tea? One of my fave things to eat in North India.
@skinnylatte god that looks like heaven
@skinnylatte Her prose reads a bit like erotica. Mouth watering either way.
@skinnylatte I wish I knew that when I went to Yunnan back in the day.
@skinnylatte wow, do they also have a video about the mushroom's?

@skinnylatte After a run this morning I realised I was out of silken tofu for my smoothie. Disaster!
@skinnylatte ugh I want to go to Yunnan so much
@skinnylatte sounds like I need to go to Yunnan.
@skinnylatte so you're saying if I do like tofu and mushrooms that's the place to go
@fluffykittycat yeah plus their mix of Indigenous, Chinese and southeast Asian food culture is really fascinating. Also very beautiful. Tea too
@skinnylatte I would love to read that.
@skinnylatte Yes please! Have only just worked out how to make tofu successfully (in the UK) after many many failed attempts. Turns out I needed the firm kind for what I was doing? Was using the soft stuff and it would always turn to mush... I had never eaten it before and being brought up on a strict diet of fish and chips, roast beef and mashed potatoes did not give me any clues... Would be good to broaden my range.
@skinnylatte have you been hitting up the fresh tofu places in NY yet? Fong On in Manhattan Chinatown, Wong Kwong Hop in Elmhurst (Queens). Fong On's savory tau huay with pickled mustard greens is top notch.

@skinnylatte

I would read that handbook

@skinnylatte I still maintain that giving white people access to tofu was one of the worst mistakes that humanity has made. One of my high school friends use to put it into smoothies. SMOOTHIES
