Variety of tofu types, number of homemade tofu places, how many restaurants serve tofu, how many types of prepared dishes, in how many cuisines, skills of tofu makes and chefs…
.. I’ve probably eaten thousands of tofu dishes and I love them all.
The state of tofu in some places make me so sad
The Mecca of tofu (and mushrooms) is probably Yunnan
I feel like anyone who says ‘I don’t like tofu or mushrooms’ could probably like the stuff in Yunnan
They take it to a whole other level. Sadly there aren’t that many Yunnan places
But this video is incredible

Sorry for the *stack, but Hannah Che is doing important work writing about mushrooms, tofu and vegan food culture in Yunnan

(Although tofu isn’t only for vegans in China, she focuses on that)
The book The Mushroom at the End of the World talks about Yunnan’s role in global mushroom diversity
