I want to make a handbook of global food based on how good tofu is in each place (tofu is not a strictly vegetarian thing in many places that eat it natively)

Variety of tofu types, number of homemade tofu places, how many restaurants serve tofu, how many types of prepared dishes, in how many cuisines, skills of tofu makes and chefs…

.. I’ve probably eaten thousands of tofu dishes and I love them all.

The state of tofu in some places make me so sad

The Mecca of tofu (and mushrooms) is probably Yunnan

I feel like anyone who says ‘I don’t like tofu or mushrooms’ could probably like the stuff in Yunnan

They take it to a whole other level. Sadly there aren’t that many Yunnan places
