This has been kept from us. It is eye-blinkingly easy. The effort : reward ratio is beyond what you can imagine, because everything you can imagine starts and ends with chocolate.

Single Bean Chocolate is WAY interesting. They taste vegetal, revealing their plant origins, and makes you understand why most commercial chocolates are blended.

I took some varieties to a friends house to play a little taste test game. But their kids snarfed them all, inhaling them without tasting.

The more expensive it is, the faster the kids will plow through it.

@goodthinking Tempering chocolate is a little beyond the average home cook though. A lot of work for small, single household quantities.

Every neighborhood should have a local chocolatier, like bakeries of old.

@jkntech I have not attempted tempering yet, the stuff as is is great, just as proof of concept lol. @jkntech @goodthinking tempering is not required if you seed or use the "memory effect". Seeding in short: keep a little bit of your original material solid, rasp it fine and mix it with your liquid chocolate just before filling your moulds. Make sure the liquid is not warmer than 40⁰C.
Memory effect is better but a bit more complicated. Look up my 1999 patent on chocolate manufacturing for details. Expired so free to use.

For me, at least: It’s way cleaner — a hundred fewer touchpoints between me, the farmers, and the served food — cleaner. That’s the value, for me, and I hope you find what works for you, too!

@lispi314 @alice It seems kind of obvious. If I pick up a potato and turn it over, I can usually tell if it’s okay. If I pick up a bag of Tater Tots and turn it over, I can read about how it was processed and what ingredients were necessary to preserve it on its way to the shelf and so on. But hey, Ore-Ida put salt on these for me, so I will buy them.

@goodthinking Almond Snickers were what I’d settled on as my favorite, but the vegan equivalent only came in the peanut variety but doesn’t do the best job at ethical sourcing of ingredients.

If you’re buying it pre-made, Dr Bronner’s makes a huge deal about their farming ethics, palm oil sourcing, and so on. Really expensive, but delicious.
