Steenson's critique seems fair overall.
In any case this study brought 1,4-hihydroxy-naphthoic acid ( #DHNA ) to my attention.

Diabetic or not, lowering glycation (#HbA1c) seems a good thing. Interesting effects reported on serum Ca & Mg, also. #Osteocalcin is linked to brain health as well as bone health.

I'm doing my own n=1 trial of Jarlsberg #cheese - only ~20g/day, tho. (57g/day in study)
