Baked pumpkin biscotti last night with an adjustment to fit #KitchenGladiators for this month: sweetening half with maple syrup! Cooked down pumpkin to cook off excess moisture to be replaced by syrup. Delightful! ^^
Ok I might muse on this on stream tonight if I stream but I'm considering the following for this month's #KitchenGladiators challenge of a "bento or boxed lunch":
- quesobirria hand pies
- schnitzel of some selection (German heritage)
- hand pies of some kind of Kentucky meal (hot brown came to mind but it's a snore)
- something from other heritage? (I'd have to see if I still have my notes from 20+ years ago high school biology class)
Finished bake from last night -- Earl Grey pastry cream-filled eclairs with a vanilla bean white chocolate ganache frosting ^^ my #KitchenGladiators entry for May!
Had a FANTASTIC time baking tonight for the #KitchenGladiators challenge! The result - bread pudding made with Irish brown bread, and a Guinness chocolate sauce - is wonderful! Complex, rich, just the right sweetness!
Please make this bread, it's absolutely fantastic. I used golden wheat / white whole wheat flour instead of Irish-style flour, with some all-purpose flour mixed in to help lighten it. Easy, no ferment. Good!
