Home Studios' Laurel Brasserie and Bar brings European dining to Salt Lake City

This bar and restaurant in Salt Lake City is designed by Brooklyn-based Home Studios as an updated, American take on the brasseries of Europe.

The Laurel Brasserie and Bar opened in February 2022 inside The Grand America Hotel, a palatial building on South Main Street in the heart of downtown Salt Lake City.

The hotel was built in 2001 with interiors based on classic European styles. Home Studios retained these influences for the brasserie, but with a contemporary spin to create bright and colourful spaces for casual family-style dining.

"The menu is fueled by the client's love for European food, culture and design, filtered through a decidedly American sensibility," said Home Studios founder Oliver Haslegrave.

The main dining room features cherry-red leather banquettes

"So we sought out to create that environment and treat it like an extension of the client's home, where a collection of European heirlooms and treasures have been passed down from generation to generation," he added.

The establishment is split into several rooms, each of which has a distinct design and colour scheme.

An adjoining patisserie, Bonne Vie, serves to-go treats from a pastel-toned space

For grab-and-go coffee and pastries, Bonne Vie features duck-egg-blue millwork, a checkerboard marble floor, and crushed velvet chairs in pastel tones.

Opal globe lights mounted on brass fixtures continue from the patisserie into the main dining room, where cherry-red leather covers banquette seating that forms a strip down the centre.

A symmetrical procession of columns with chamfered corners are wrapped in reclaimed tile and connect with sculptural ceiling beams.

"Laurel is grounded in the present but full of history — and thoroughly unique," Haslegrave said.

"We incorporated a wealth of materials to elicit an upscale brasserie with approachable warmth."

An additional dining space is decorated in a spectrum of blue hues. A bold floral-patterned carpet and illustrated wall coverings are joined by velvet chairs and walnut-topped tables.

This room also features a green blown-glass chandelier and olive trees placed between the windows.

Reclaimed tiles, wood panelling, and opal and brass lighting all add to the contemporary flair

Antiques and vintage pieces are also scattered through the interiors, overall creating a "transportive guest experience that feels right at home within the context of the Grand America Hotel".

"We sought to create a distinctly modern and American spin on the classic all-day brasserie, built to delight and inspire locals and tourists alike," said Haslegrave, who set up Home Studios in 2009.

The firm has a growing portfolio of hospitality projects across the US, with recent additions including the Alsace LA hotel with Mediterranean influences and The Harvey House restaurant in a Wisconsin train station.

Alsace LA hotel by Home Studios has a Mediterranean flavour

Mediterranean influences, warm wood tones and vintage objects are found throughout this Los Angeles hotel with interiors by Home Studios.

Located in the southern neighbourhood of West Adams, Alsace LA occupies a purpose-built property designed by NMDA Architects that houses 48 guest rooms over 22,500 square feet (2,090 square metres).

Brooklyn-based Home Studios looked to the architectural variety of the historic surrounding area, and the similarities in climate and lifestyle between Southern California and the Mediterranean, as starting points for the interiors.

Guests arrive at a courtyard area paved with terracotta tiles, surrounded by rockery gardens and adjacent to a shaded outdoor seating area.

The entrance is located beside a protruding section of the building that lifts off the ground and angles upward, following the staircase inside.

Entered under a portico, the lobby is filled with caramel-toned materials and furniture – a mix of vintage and contemporary pieces.

White oak is used for flooring and to create a ceiling feature in the lounge

Tiled doorways, soft cove lighting, and eclectic homeware by local designers all add to the ambience.

Behind the custom-made, white-oak reception desk is a site-specific mural hand-painted onto glazed tiles by LA artist Lukas Geronimas Giniotis, whose work is found across the hotel.

The meeting room is furnished with Gubi chairs and handwoven Moroccan rugs

"Like scenes from mythology, each of Giniotis' tile motifs hint at the use of space throughout the hotel's common areas: divers near the exit to the pool, figures playing near the gym, and bodies ascending stairs," said the Home Studios team.

Oak is also used for the lobby floors, and to form a wall-to-ceiling feature in a niche that acts as a lounge.

Across the courtyard is a light and airy meeting room, where a custom conference table and Gubi Stay lounge chairs sit on handwoven Moroccan rugs.

Each 230-square-foot guest room features custom designs by Home Studios, including upholstered headboard panels, rattan and wood wardrobes, and sculptural brass hooks.

Larger suites enjoy private balconies or terraces, as well as custom dining tables and bespoke pull-out sofas.

"With an emphasis on the unexpected, the hotel is truly a one-of-a-kind space, made culturally relevant with contemporary art, photography, and playful design details that incorporate subtle references to European antiquity by way of local craft," said Home Studios.

Home Studios was founded in 2009 by Oliver Haslegrave and has since racked up a portfolio of hospitality projects across the US.

Brooklyn-based Home Studios has turned a former rail baggage handlers' building in Madison into dining spaces that evoke "the golden age of train travel".

Hidden behind an old train depot in the Wisconsin capital, The Harvey House is a 5,000-square-foot restaurant that nods to the Midwestern state's supper club culture of the 1930s and 40s.

American cuisine is served over two levels of the old baggage claim house, each with its own bar, which Home Studios renovated with the building's history in mind.

Additional dining spaces are located in a glass-enclosed area on one of the shuttered station's platforms, and in a 1960s train car that sits on the tracks.

Home Studio retained many of the original features

Many of the building's original features were retained, including ceiling beams, windows, and the station's sliding wood doors.

The brickwork and dark green window trims guided the colour and material palette for the project, which includes dark woods and tactile upholstery, as well as custom millwork and commissioned artworks.

"Home Studios' primary design goal for The Harvey House was to create a warm and inviting restaurant that marries the familiar comfort of a Wisconsin supper club with a uniquely transportive experience evocative of the golden age of train travel," said the studio.

In the downstairs dining room, patrons can watch the chefs at work through a large opening to the kitchen. Wooden banquettes are cushioned with upholstered backs and seats in various tones of green.

Custom light fixtures reference those found in Paris metro stations, giving off a soft glow that adds to the moody ambience.

An open doorway leads through to the platform patio area, where black benches and rattan chairs accompany marble-topped tables.

Planting, string lights and vintage rugs give this space a more casual feel.

Upstairs, light-brown leather seating and teal bar stools continue the colour palette found below.

The almost symmetrical layout includes wood and glass partitions that delineate different dining areas.

Behind both of the restaurant's bars are works by local artist Jessica Niello-White, created specifically for The Harvey House.

Placed above the liquor selves and in the flanking arches, her images are based on scenes of the Wisconsin countryside as they might be seen from a train window.

Home Studios was founded by former book editor Oliver Haslegrave in 2009, with a focus on residential and hospitality interiors.

Previously completed projects include a cocktail bar in West Hollywood and an apartment in Manhattan, while the studio's range of collectible furniture and lighting debuted at Sight Unseen Offsite in 2017.
