Does anyone out there have a good system for keeping hand-cut cubes approximately the same volume?
I'm also conducting an experiment to see how the concentrated solids in the water change during the ice forming process.

I think I may have finally found a substitute for egg white in cocktails that actually works. Pretty good foam, at least initially; completely neutral flavor, as far as I can tell; and good mouthfeel.
