I watched a fascinating video from Religion for Breakfast this past weekend. In the video, Dr. Andrew Henry goes through the historic origins of the Easter Bunny myth.

Short Version: It seems to be a random local tradition from some small region of Germany that only really spread much further after German immigrants brought their tradition with them to the US, specifically Pennsylvania (Pennsylvania Dutch). There is evidence for concurrent German traditions for an Easter Stork and Easter Fox in other areas. However, there's not really evidence for Pagan roots of the traditions associated with the Easter Bunny.
