"A Bolognese-style sauce that uses up all the veggies in the fridge is a big win in our book! Perfect for cold weather and clearing out your entire crisper drawer. It’s by no means an authentic Bolognese but its feels and tastes rich and meaty, whether you include meat or not. I’m a big fan of stashing a big pot in your fridge to ladle onto pasta, polenta, roasted veggies, rice, eggs, or whatever else you like.
This one used up the following items that had been hanging around the kitchen:
- 5 slightly wrinkled tomatoes and a half-opened jar of tomato sauce that’s been sitting in the fridge for….weeks?
- A tub of verging-on-too-old mushrooms
- An entire head of broccoli (I often use cauliflower here as well)
- Two carrots that just needed a few brown spots trimmed off
- An entire head of celery
Huge, right? I can’t think of many more dishes that welcome everything from root veggies to brassicas to any kind of mushroom, plus tomatoes in any form whatsoever. Plus they can be old, wrinkly, shriveled, and generally not-great-looking at all, but as long as they’re not moldy or rotten, you can get some good use out of them in this sauce!"

"Over the summer we got to work with the City of Boston on the launch of their new curbside food waste collection program! As budding food waste management nerds, we were super excited to help spread the word on how to use the bins as well as how to keep food out of landfill!
Here are some of the Use-It-Up hero recipes we demoed: a Thai-style curry, a frittata, and rice fritters. They’ll help you use up your #leftovers, clear out your fridge, and get a delicious meal on the table fast!"

A simple way to reduce food waste at home is to get organized. You can arrange your fridge so that items with the nearest expiration dates are front and center. Keeping a running list of your food inventory and its use-by dates can also help prevent overbuying and forgotten food. While this might seem time-consuming, a 2020 study showed that these small habits can lead to significant savings of both food and money.
We also need to shift our perception of food. Instead of cooking whatever we’re in the mood for, we should make meal decisions based on what needs to be used first. Furthermore, researching recipes that use leftovers and food scraps is a great way to be more resourceful. For example, increasing composting rates globally could generate carbon savings equivalent to taking roughly 15 million passenger vehicles off the road for three decades."

"Your food scraps could be used to help support the Everglades through a new partnership between the village of #PinecrestFL and the #MiccosukeeTribe.
"Instead of dumping #FoodWaste into crowded #landfills, which produce #methane emissions, the #EvergladesEarthCycleProject will expand Pinecrest's residential composting program and deliver nutrient-rich soil to the #Miccosukee Tribe.
"Driving the news: The project, funded with a $400,000 federal grant and other contributions, calls for installing four new #CompostingBins in Pinecrest and three around #MiamiDade County District 7.
"The initial phase of the program will supply compost to the #SwampyMeadows #CommunityGarden, which grows vegetables just outside the Miccosukee Indian School.
"Another proposal that's been floated is adding new soil to the Everglades' tree islands, though that would need tribal approval, says the Rev. Houston R. Cypress of the #LoveTheEverglades Movement, a partner in the program.
"Cypress told reporters on an airboat ride through the Everglades last week that the tribe teaches 'the essence of being in harmony with nature is giving back to it.'
"'With the Everglades Earth Cycle Project, we're giving back clean and healthy soil; we're giving products that might eventually improve the water quality out here, but we're also giving directly back to local indigenous communities here,' he said.
"Pinecrest already has two free public composting bins, one at the Pinecrest Public Library and another between the Community Center and Pinecrest Gardens."
