Erik Kim’s Pepperoncini Tuna Salad from The New York Times has been on my list since forever. But when the craving hit, it didn’t feel like fiddling with a can opener and draining. Summer laziness takes unexpected forms.

That day, a piece of salmon in place of canned tuna — 10 minutes at 425°F on a piece of parchment — seemed less labor intense. Also, empty fish cans during summer heat, even rinsed, sitting in a recycling bin until the next pick up which is in two weeks — no.

Croissants felt a bit too buttery for mayonnaise so we lined up our homemade sourdough with arugula and had it open way. Excellent!

WHAT WENT IN
— 1.5 lb salmon filet
— 1/2 cup mayonnaise
— 6 Tbsp chopped pepperoncini
— 2 Tbsp pepperoncici brine
— 2 Tbsp sweet pickle relish
— 2 Tbsp toasted sesame oil
— 1 small garlic glove, minced
— salt & pepper to taste
— 1.5-2 cups thin sliced celery
— arugula for serving
— bread any kind

No one inquired what I was making the other day with #Pepperoncini! So here was the next step prior to an hour and a half in my biggest Dutch oven to make about 10 pounds of Mississippi Chicken. I followed this recipe exactly. Astonishing that 4 ingredients made such perfection. 6 frozen 2-3 cup portions ready for any recipe needing cooked chicken. Before I share what recipe I was making with #Pepperoncini here is a bonus #TipOfDay. No one blinked at my other tip of using scissors, so here’s one of my favorite measuring tools, a glass tumbler marked standard and international for liquids. I needed 1 cup of the pepper juice from that jar. Anyone guess what I was making? There is another main ingredient in last post’s photos.
One question and one #TipOfDay for Sunday. First, I’ve never eaten or cooked with pepperoncini before. What’s it usually used for? Is this brand a good one? My tip is that I needed sliced pepperoncini so I found it easy using scissors. Also use scissors for thin pizza, quesadillas, and cooked asparagus.
