I know there is orange and purple kumera and that is the colour of the actual kumera not the skin.
There is also what I will call regular kumera that has a reddish skin and the "flesh" is a sort of off-white cream colour.
Recently I have noticed that the stuff you buy in the supermarket that is sold as regular kumera has a whiter skin and does not taste the same as the off-white kumera
Does someone out there know all about kumera and can explain this difference please?
There’s an array of sweet potatoes available in New Zealand and I finally found the best of all. I call it the traditional Māori kūmera as it was the only one available when I grew up. It’s sold as Red Kūmera and it has a dull yellow interior
