I used Kenjis "The Wok" book to learn about velveting meat which was a plus --Im definitely going to keep trying that to get better. Blanching the broccoli before the stirfry made a huge difference too.

Yeah, without the right equipment I feel like this is probably really difficult! And yet now I'm hungry to give it a go.
#KenjiLopezAlt has a Chicago thin crust "tavern style" dough and sauce recipe in the New York Times. I might start there. (Let me know if you want the recipes, happy to share and hate that they're behind a paywall)
I feel like I also saw a tavern/bar style thin crust in Serious Eats once upon a time but not sure.
For breakfast: menemen from #KenjiLopezAlt (but with #JustEgg). Great use for shishito peppers (but can make with pretty much any)!

After a week and a half in Turkey, this was the one dish that my sister, my wife, and I were consistently craving. Menemen is a dish of eggs scrambled just until barely set, mixed with tomatoes, chilies, and tons of olive oil. I love to eat it with a side of salty cheese, olives, and some good crusty bread.
This is a Jamie Oliver recipe:
Cut unpealed potatoes into chip shapes, deep-fry for twelve minutes at 140°C/284°F, let them cool off and then fry them again at 180°C/356°F. It's a dementedly fast & easy process.
