Today I tried my hand at steam canning. Not sure if it’s going to seal up all the way to safely preserve, but at least I made a valiant attempt.

Kat brined some small green walnuts, a couple of years ago, they've been sat on the kitchen bench since. In a cleaning blitz today I decanted & rinsed them. They taste OK, just very very salty… now in vinegar with a little brown sugar, allspice, black pepper, and a slice of ginger. Hoping the vinegar pulls some salt out. Even this salty I reckon they'll be good on some cheddar onna biscuit.
Love how a halved pickled walnut looks like a tiny brain inna tiny skull.
Today's haul.
I need to do some canning tonight, I guess. I have another pound of ripe Romas in the pantry.

I understand now why most canning recipes call for, like, 7 pounds of vegetables.
I scaled down a recipe for pickles to use two pounds of cukes and that's a TON of work for one lousy jar of pickles.
Home canners and preservers, I'm in need of advice.
I planted a couple of Parisian Gherkin plants with the intention of making pickles and thus far my plants have produced... A single cucumber.
What... Do I do with it? My understanding is that with pickles you want to pick and process the same day. Is there a way store it until I get enough for a batch? Whenever that is? There aren't even any other female flowers on the plants. Should I just eat the cucumber?

I want to get into canning and preservation this year. I'll be growing beans and tomatoes to start.
I know beans are a low acid food and would generally need a pressure canner, but can they be canned using a water bath if they're pickled?
