Cooked the Cup!

At the start of #Euro2024 @GrahamCampbell and I set ourselves the goal of cooking or baking something from every nation playing in the tournament.

Awesome to try so much good food while watching so much good football. All the details are in my #CookTheCup posts.

I gotta say, thank you to everyone who liked, boosted, commented - it's been fun 🥰

Congratulations Spain! 🇪🇸 🥳 🇪🇸

Bacalhau à Gomes de Sá - Baked salt cod with caramelised onions and potatoes

Mendes uses freshly-cured cod in this recipe (traditional is dried); it brings great flavour but I also always just find the process amazing.

Recipe by Nuno Mendes in his book Lisboeta. (I am such a Chef Nuno Mendes fan. Was not prepared when the commentators started talking about Nuno Mendes on the ball for the Portuguese national team 😅)

Croque Madame

Was gonna do this tomorrow, but who can resist a Croque on a Friday. Forgive me, France, for the uneven oven fries 🫣

Didn't use a recipe, but this one by Michel Roux Jr (via The Good Life France) looks like what we do: https://thegoodlifefrance.com/michel-rouxs-authentic-croque-monsieur-recipe/

Flemish Beef Stew (Stoverij)

‘Stoverij’ or Flemish beef stew is Belgium’s response to chili cheese fries. It’s hearty, stick-on-your-ribs food that feels like a warm hug on a cold winter’s day. “…but it’s Sum…

Æblesnegle - Apple cinnamon rolls

Great flavours, love the addition of apple. Recipe didn't work great for me tbh but I am super-keen to make my own version come the autumn.
