Back in 2005 when I really started fine tuning my evaluation of #espresso machines, and #coffees roasted for espresso, this is one of the tests I would do: splitting a double shot pull into 5 second segments, and tasting each segment.

I'm considering bringing this back, as I work on a new test regimen for roasted coffees. What do you think? Have you ever segmented an espresso shot and tasted each part?
