It’s my birthday and There Will Be Cake!
Unfortunately the cake was just finished as I arrived and really needed at least an hour in the bakery’s fridge before I attempted to bring it home. It will still taste delicious, but I feel like it’s rather became a metaphor for this whole cursed year.
Fans of the #GreatBritishBakeOff may recognize the Prinsesstårta (Swedish Princess Cake) that’s suffered drift while resting on the passenger seat of the car on the brief trip home from Carina’s Scandinavian Bakery.
This highly complex cake is made even more difficult by being gluten free, soy free, and vegan! For those who don’t know what this cake is, there’s a sponge, raspberry jam, and whipped cream make up the layers. Then more whipped cream is shaped to a dome at the top. Over all of this is a thin layer of rolled-out marzipan, dyed a grass green, topped with a rose made with either more dyed marzipan or frosting.
Carina’s is all vegan, soy free, and mostly gluten free. The owner is vision impaired and tries to employ orders who are vision impaired or blind. They’re in #BeavertonOregon, close by the farmers market, downtown, and the library.
