Holy hell. Looking-glass is truly amazing! It makes VFIO GPU Passthrough + QEMU/KVM + Windows 11 + dedicated NVidia 3070Ti work seamlessly (once the VFIO stuff is all set up). No longer any need for a dedicated display, keyboard, and mouse!
Setting up VFIO GPU Passthrough using the following guide that includes Looking Glass (this is new to me!). I haven't done this in a couple years, but this time I have two discrete video cards installed, so no need to use the iGPU for the Linux side.
