My fermenting hot peppers with sichuan peppercorns didn’t grow mold! I decided not to tempt fate any longer by letting them sit at room temperature anymore, so I ground the entire batch up into hot sauce. It seems really mild at first, but a fiery heat grows in the aftertaste and lingers quite a while.

What more widely-known rum would you suggest as a substitute? I know that eliminating the Indian element spoils the name, but I’d like to try this one at home if I can.

Old Port Rum I am reviewing is in an old style bottle. The bottle is bell shaped and quite distinctive with a wide cap similar to Barbancourt's.
