That would be a nice little server with Proxmox. How much RAM can it pack?
@Starkimarm Alder Lake-N / Twin Lake chips only support single channel memory (so probably also a single SODIMM slot) up to 16GB on paper, but I've seen a lot of reviews saying that they also work fine with 32GB.

@exec Quite a lot of these kinds of boards have Intel NICs so I'd expect decent 2.5G speed. For what it's worth, I have this network card and this switch, both from AliExpress, and together they do give me ~2.2Gbps for ssh transfers.

@exec It's very probably a limitation of the CPU. The N100 has a total of 9 lanes. Probably the N305 too.
