Just made $8 worth of ricotta from milk that was soon to sour. I keep my fridge cold, so the milk is already 8 days past “best by”!

So, that’s $3.25 of whole milk that was going bad & now I have ricotta for 8 or so days. Just takes 10 min & 120ml of vinegar.

SO EASY!

And don’t throw out the whey! Use it in baking and cooking! I’m using 1 cup in my chicken curry tomorrow, instead of water. I make my #sourdough with it too! #food #cooking

@snarkysteff any idea if this works with non-dairy milk?

@Armavica you’re gonna taste it if it goes sour. You could try that but ricotta should have a pretty clean flavour to it, IMHO. But if you’re sitting there with a half gallon of milk and it’s getting to the point where you sniff it every time and now you’re getting pause, just chuck it in a pot and do this.

I’m making ricotta pancakes and pizza, plus a few ricotta-toast breakfasts all from this.

@snarkysteff the leftover whey can be used in lieu of buttermilk which will up the value of your almost sour milk a few more bucks
