PIZZA NIGHT. Ricotta base, leeks, walnuts, Italian sausage, a little mozzarella. #Sourdough crust.
The ricotta base is homemade ricotta that I purée with a bit of heavy cream, olive oil, garlic, and white pepper.
The Italian sausage I take out of the casing and roll into 1/2” balls. I do NOT precook them. They cook on the #pizza and the fat adds to flavour.
Leeks are sliced super thin and applied to lightly cover it all. A handful of walnuts get chopped as the final topping. #cooking #food
