I always make #lasagna with no-boil noodles. Am I missing out compared to traditional dried lasagna sheets? I can believe that fresh dough is better, but what about dried?

I make the rest more or less from scratch (canned coarse ground tomatoes when I'm using a red-sauce base; Bechamel from scratch; etc)

What is a no-boil lasagna noodle, anyway? Like... how come it be?

@lambdageek I think no boil can go direct into a moist lasagne, the alternative is sheets you cook then put hot & floppy into the lasagne
@directhex yea I understand the difference in how to cook with them. I'm just wondering if I'm leaving flavor oh the table by using the easier ones

My impression is that no-boil pasta like lasagna or shells will cook without boiling, but you get a starchier texture. Al-dente or any kind of "chew" is difficult without boiling.
Wish I knew why though.
@lambdageek There is no right way or wrong way. If you found something that works and you like it, then stick with it. #cooking
