I made the mistake, I mean great decision, to go to a fancy butcher shop in a town that has one, and honestly, it's not more expensive than my friendly neighborhood beef producer. Lots of beautiful variety, all local. When I asked if they had bacon ends, the whole vibe changed and suddenly they were all my besties. 😂 Is this a butcher shop secret? I can't imagine it is.
They did, in fact, have bacon ends "in the back" and now I've got coddled fresh farm eggs with cream and smokey fried bacon pieces, basil and scallions in mini cocottes, in a water bath, in the oven. Twenty dollar breakfasts for maybe $2 each.
