Quick Bulgogi
Sometimes need to whip up something fast and easy for dinner, so yesterday I made bowls using the Trader Joe’s vegan freezer bulgogi (a marinated seitan) and some freshly chopped bok choy over farro.
The farro was the slow part, needing about 30 minutes, so I got that going while cleaning and chopping the bok choy. For that I separated the stems and diced those, starting them browning on medium-low for a while. Then I added several cloves of garlic. The bok choy leaves I sliced up a bit and saved for the very end, adding them with tamari to taste and cooking a bit longer.
The bulgogi is the easiest to just cook from frozen; the only challenge is breaking up the strips as it defrosts. I like to lid it with a bit of extra water on the hot pan first to kind of steam it for a moment.
