It's a great way of getting the content you want without needing to follow the entire world.
Click on a hashtag that you want to follow and look for the follow icon (see attached screenshot) near the top of the feed.

@rushkeating To hide toots from an entire instance, you can go to a user in that instance and choose "hide everything from [instance]"
I don't know how to do it without a use as an example.
