These worked fine. WW flour, greek yoghurt, some fresh lemon zest and ginger, bicarb, baking powder, egg, peanut butter, chia seed, monkfruit extract, and just a little butternut squash. Light, tasty, and given the baker, of course freeform rather than constrained by muffin tins. I punted an overstressed friend's call while I popped them in the oven cleaned my hands, and emptied my bladder. Then I called her back to reassure her about the likely minor import of her plumbing problem (10:1 odds the drain for her washing machine was clogged, rather than anything more dire), gave her contact info for a reliable plumber, got back downstairs to check the oven and found them just about done. Cool.

Here's a recipe for low fat (swap sugar with Stevia for low sugar) oatmeal cookies, small batch, maybe a dozen or so cookies. I needed a recipe for cookies for a family member with diabetes and heart issues. I may use mashed avocado instead of applesauce for a healthy fat, better texture, & add chopped apples, dates, or dark chocolate chips. For gluten free, try it with a gluten free flour.

Hmmm. I might up the ginger a good bit, add fennel seed, and citrus zest--in addition to tweaking the basic dough. I shall report further.
Thoughts on fennel versus star anise?
If I get these right, I ma-ay try to whip up cocoa-mint olive oil cookies.
