For #lunch today, I tried making something shakshouka inspired - with my homemade #idli/ #dosai batter!
Lucky for me that it turned out so well! :D ๐
Fermentation is wild. ๐
This batter was fermented for almost 25 hours. So irresistibly bubbly.
๐ Made an egg #dosai for #lunch, and heated up some tomato sambar.
The #dosai are here and they are GORGEOUSLY YUM
On the side is a sambar, coconut potato bhaji, two kinds of coconut chutney - one with tomato and the other one with coriander.
Don't want to toot my own horn but the chutneys are some of the best I have ever made. ๐คค๐

Guys I have taken the peek and refrigerated the dosai #batter!! ๐๐ Didn't do a ladle check right now but for now the batter looks good, smells tangy.
I can't wait to see all the bubbles under this layer when I make the #dosai tonight.
