Born & raised in Louisiana and this has only just now occurred to me:
Why do we not do bread with boiled crawfish? We do bread with boiled shrimp. Crackers or bread with crabs, oysters, fish... heck, we have a whole seafood poboy industry of seafood-and-bread combinations.
But I've never had bread of any kind at a crawfish boil. Potatoes, corn, garlic... sure. But never any kind of bread.
Why??

Crawfish producers are pumping more water into ponds, and the high price of diesel makes it expensive to irrigate. Without the issuance of H-2B visas for guest workers, there aren't enough crawfish peelers.
