Dinner tonight came out well. I breaded chicken breasts, which I do rarely. It occurred to me during prep that I should take full advantage of the dishwasher and use dishes with wild abandon. So I dumped all the chicken into the egg wash at once, and had a clean plate for the step between the flour and the second egg wash, for a total of four plus the pan. It went MUCH faster than dipping them one at a time. I'll do that again.
