#croissants au levain and chocy thingos. #sourdough #bakingforwork. Tried a different butter, Truly. It tasted good but shattered easily. Also tried a new proofing set up. Using a heating mat (for seedlings) had the croissants on their baking pan on a rack sitting in warm water in a pan on a heating mat, with a temperature gauge at 25C for 6 hours. A long proof probably gave it a bit too much sourdoughy taste.
