OMG. "pinyakurat" from FEATR:
Pinyakurat (pineapple spiced vinegar)
10 garlic cloves, peeled and sliced
¼ cup pineapple, diced
20 pcs bird’s eye chilies
1 knob fresh ginger, scrubbed and sliced
1 small red onion, quartered
2 cups coconut vinegar (sukang tuba)
2 tsp salt
2 tbsp sugar
NB: She uses way more than 1/4 c. pineapple in the video. And I wouldn't use red onions, because I dislike them. I would mix scallions and shallots.

Thinking about #sawsawan, which means some #Filipino #food #cuisine is definitely in my near future. I did make adobong manok for my mum while I was in California; I figured she probably hadn't had any in a long time.
Unlike what you might learn from Google, "sawsawan" is not a specific sauce, it's a generic term for table condiments and/or dipping sauces, and varies from dish to dish, family to family, person to person, often being mixed fresh to personal preference by the diner at the table.
Nothing reminds me more of my #Filipino father than the sound and the taste of dipping pork rinds into a little dish of #vinegar and #garlic.
Sharing a little snack like that with my dad was always a happy moment.
For some reason, that sound, especially, is something that stuck with me from my childhood, and of course I love that taste. Vinegar and garlic and salt are in our blood, in our genes.
