Today I made the Spicy Peanut Salad from the Plant You cookbook by Carleigh Bodrug. It's delicious! The ingredients are basic, everything grabbed easily at Safeway. I'm working on having a couple "fridge salads", bowls of tasty healthy food I can pull out for snacking. This will be perfect.
The Spicy Peanut Dressing looked good so I doubled it, and then for dinner I put a little over gluten-free ramen. Ohhhh wow. Soooo good.
