Baked some foccacia bread for the first time! It turned out pretty well, though it needs more salt and I need to figure out why it turned out a bit more dense than planned. Otherwise, the flavor is spot-on. :D Not bad for a first try!

As part of my homework from therapy this week, I was tasked with making dinner one night, all by myself without help. A challenge, given my issues with my arthritis, but I was determined.

This is supposed to be an exercise in taking back some of my independence, and showing myself that Yes, I CAN do the things.

Today in food therapy, Calvin put a tootsie roll to his teeth!! That's huge for the kid who didn't want to be in the presence of food when I met him! We are up to biting/licking fritos and banana chips (sometimes) and now kissing chocolate! Woo!
