i gave my bambangan (wild mango) a week to ferment and the result is perfectly putrid 🀀

the latex is pretty bad for you so fermenting it makes it easier to peel, with the bonus of it giving a slight boozy punch πŸ‘Š

i made a #sambal with it with some homegrown shallots, vegan mock anchovies, and some potent #chilli 🌢️ i picked up from the market

they’re endangered unfortunately πŸ˜• and not grown commercially so they’re under threat to ecosystem loss.
