My favourite film music of all time is Neil Young's soundtrack to the Jim Jarmusch existential Western "Dead Man" starring Johnny Depp.

I believe Neil jammed on "Old Black", his modified Les Paul guitar, to a rough cut of the film, and came out with variations on a theme that never quite resolves, layered with amazingly crunchy distortion.
The credits (above) mix acoustic and electric guitar, but the soundtrack album (which perversely does not include the main titles) alternates electric guitar jams, dialogue (spoilers) and Johnny Depp reading William Blake poetry.
