@middleclasstool I use them for cut citrus and for covering things that don't need to be airtight, e.g. soaking beans. They do lose their waxiness, & you can get bars to re-coat them. (There's resin mixed in to keep them flexible.) I haven't re-waxed mine yet.
I've tried them for bread & cheese--they worked great when brand new, less so after just a few uses.
I store them folded in (ironically) a ziploc bag. You can also roll them up one on top of the other, so you just pull one off the roll.
In which I discuss the properties of several salts - and provide a recipe for delicious caramels (which you can dip in chocolate & pretend are Fantales).
