It is helpful that i realize that pulverizing the cookies into crumbs and waiting for the cream cheese to come to room temp are the most annoying things about making cheesecake.
Yes, i have a tiny food processor. No, I didn’t realize til i was typing this that i could have put the cookies through it in batches.
Anyway, i remembered to do these things early instead of right when i want to make cheesecake, so, winning.
