@sbourne your nearest (idk for you, it might be a bit like us) Asian grocer will definitely have dried mushrooms in packets. Shelf stable just about forever.
I got our last packet at the local big chain supermarket in the Asian food section.
@sbourne @trib it kinda got me wondering. Here (Poland) you can get dried mushrooms[*] almost everywhere. Maybe not everywhere, but usually it's not a big problem to find a store where you'll be able to buy them.
But tbh, I've never thought of buying them online.
Mandatory photo.
[*] Although there are some "best before" dates, most can be stored almost indefinitely.
@trib @sbourne Kinda related. Here there's a long tradition of "mushroom hunting"
https://fungiatlas.com/mushrooms-in-poland/
Although it's not been cultivated in my family, so I don't know much about various species, therefore I don't do it on my own. I took part more than once as a member of a larger group. It is a really calming experience.
From what I've heard in the US there are some local clubs/organizations/events/tours, where you can go foraging mushrooms with help from mycophiles.
@sbourne @redcrew These are 2 of my local options, often in my farm subscription box :)

West Coast Wild Foods is a company focusing exclusively on natures most exquisite wild foods. We offers fresh, dried and frozen wild mushrooms like Morel, Porcini, Chanterelles and other seasonal wild foods online and in-store!
You could grow your own shiitakes from a kit and dry them yourself.
I used to buy them from the Asian market but I worried about preservatives our local froofroo grocery store has preservative free dried shiitakes. I bought those for years.
We grow many mushrooms on logs or in sawdust and dry them ourselves now.
