I think the person who "invented" the potato is the greatest innovator of our time because they actually tried to eat a potato and were like "OMG what is this raw, hard, bland, starchy mass?!?" but then had the drive and perseverance to try cooking that blob into the edge of obliteration to realize it's one of the most delightful foods on the planet.

@Alice I feel the same way about coffee. The coffee cherry is picked before it is ripe, and is actually poisonous. Then it’s dried, and then roasted, and then ground, and hot water is passed through it.

How long did that experimentation take? How many people were lost?
