I think the person who "invented" the potato is the greatest innovator of our time because they actually tried to eat a potato and were like "OMG what is this raw, hard, bland, starchy mass?!?" but then had the drive and perseverance to try cooking that blob into the edge of obliteration to realize it's one of the most delightful foods on the planet.
@Alice I think about those root vegetables that you have to cook to make not poisonous: "Noooo don't eat the cassava! The last guy to do it died" "But I'm so hungry! I don't care, I'll just put some cassava in the stew to make it go further"
