Tasty and effortless, store-bought gnocchi offers a much-needed shortcut for busy weeknight dinners. You can bypass boiling a pot of water for the gnocchi, and instead simply give them a quick sear over high heat, which creates perfectly crispy edges. Toss the crispy gnocchi with lots of sweet, fresh corn kernels, prepared pesto and a hefty sprinkle of grated cheese, and broil until the cheese gets bubbly, gooey and slightly charred in spots. The molten cheese brings all the ingredients together, but a high ratio of corn to dumpling and the bright basil in the pesto keep this dish light enough for summer.

This gently spiced beef pie, adapted from the βZahav: A World of Israeli Cookingβ by the chef Michael Solomonov, is scented with cinnamon, dill and parsley. The recipe calls for purchased puff pastry, which makes it extremely simple to make yet wonderfully rich to eat. Leftovers will last for a few days in the refrigerator. Reheat at 350 degrees before serving.

A good way to make butternut feel fancy

Pollo asado, Mexican marinated and grilled chicken, uses pigmented annatto seeds to get its signature brick red color. Annatto seeds can be found in Latin supermarkets or online, but a cube of prepared achiote paste is a suitable sub. This recipe uses two types of dried chiles, for which there are no substitutes; however, if theyβre hard to come by, swap them out for a can of seeded chipotles in adobo for a different, but still delicious, smoky vibe. The acidity from the citrus in the marinade helps tenderize the chicken legs, but a limit does exist; keep it under 12 hours. Serve the chicken alongside pickled onions and warm tortillas for quick tacos, or beans and rice.

Pasta alla vodka is a classic because each ingredient works together beautifully: the heat of the red-pepper flakes and vodka, the sweetness of the tomato and the richness of the cream. And that combination works equally well with beans and greens. Use chickpeas or white beans, and kale or any other dark leafy green, like Swiss chard or broccoli rabe. The finished dish keeps for up to three days in the fridge. Eat it on its own, with crusty bread for dunking, or over pasta.
