A mushroom stir-fry with rice and spring onion Tamagoyaki

Most of the time simple things are the best. I had some leftover shiitake and fried those with some fresh Shimeji mushrooms that I had bought earlier that day in a little oil until the had softened a little bit. Then I put those on a plate and fried some thinly cut green cabbage strips. I added the mushrooms back, added about three teaspoons of Mentsuyu (Japanese soup base), a teaspoon of soy sauce and a tablespoon of sake. After a little stirring I also added a generous handful of baby spinach leaves and after mixing them in, served this over Japanese rice with the Tamagoyaki.
