I let the desi chickpea and Kamut wheat tempeh go for 80 hours in the end — got to doing other things.

I did some calculations and found that buying tempeh in the store costs 9 or 10 times as much for tempeh not nearly so good (plain old soy instead more interesting and nutritious combinations of legumes and grain).
