@ZachWeinersmith Pancake is a pretty broad term, this is sort of like asking if the inside of a thing should be cake or custard. Swedish pancakes are going to be closer to custard pudding in a broad flat disk shape.

Pancakes are made to spread / put things on top, then roll / fold / whatever. Thick pancakes are a waste of toppings.

@ZachWeinersmith More cakey than custardy, but I chose something else because a pancake is usually much higher hydration to take advantage of the method of cooking.

The custardy cupcake is the canelé, which is also delicious.

@ZachWeinersmith all the people saying "so thin it has no inside" are absurd and are forgetting that crepes exist.

I like raw dough but I will admit that is not the proper pancake consistency. It should be fluffy but not wet on the inside, like a cake with a very open consistency.
