I can grow wheat, and I think yeast is fairly straightforward to culture, but I don't actually want to have cows on the land I've got. I can hear a cow on a neighbor's plot though, so maybe I can barter for milk.

You can mix water and flour in equal measure, leaving it in your kitchen until the yeasts in the flour start going. People also soak raisins in water and use the water, or apple peelings. They're getting the yeasts there.
For about 2 yrs I just used a snippet small handful) of dough from current batch to start next one
You may also get some other like Lactobacillus which is sourdough. It's not something to control, it's something to watch.
