I baked a loaf of bread the other day, first time in years, maybe decades. Baking bread from scratch makes you feel like you can do anything! And it smells great.

I can grow wheat, and I think yeast is fairly straightforward to culture, but I don't actually want to have cows on the land I've got. I can hear a cow on a neighbor's plot though, so maybe I can barter for milk.

You can mix water and flour in equal measure, leaving it in your kitchen until the yeasts in the flour start going. People also soak raisins in water and use the water, or apple peelings. They're getting the yeasts there.

For about 2 yrs I just used a snippet small handful) of dough from current batch to start next one

You may also get some other like Lactobacillus which is sourdough. It's not something to control, it's something to watch.

@jamesbicycle @katve I'm just at teh start of my bread jouney. Looking at the other results in the #Bread thread made me realize that there's a whole universe to explore. (I need like seven more lifetimes, running concurrently.)

About 35 yrs of, it's a great child- parent activity which is when I started. Recommend every new baker try pitas too. Surprising they are.

More. That's the flour ratio, approx. I don't measure and lose track. This one had oatmeal, flax & I think chia seeds.

@carapace It's easier to bake bread if you buy a loaf at the store and stick it in the oven for a couple minutes. #lifehack
