I have an air fryer, and some foods I cook in that are somehow comforting — recently some cheater Szechuan air-fried green beans; also air-fried brussels sprouts.

And I cook long skinny purple potatoes — specifically, Stokes Purple® — and chill them (making the starch resistant), then eat as a sweet snack — like a banana.

I have to watch some foods. I'm a type 2 diabetic and potatoes, corn, and rice tend to spike my blood glucose.

I do, however, chill starchy foods after cooking them, and that makes much of the starch resistant. Resistant starch acts like dietary fiber.

Plus purple potatoes are pretty good for insulin resistance. I make bourbon sweet potatoes for holiday dinners, and most recently I used purple potatoes:

I try to incorporate a lot of whole grains and I add a bunch of goodies to my sourdough. I found a blend from King Arthur Bakery that I’m loving, it has Whole Oat Groats, Rye Flakes, Wheat Flakes, Sunflower Seeds, Sesame Seeds, Flaxseed, Poppy Seeds, Hulled Millet, and I add pumpkin seeds to all my breads and salads
