@Beckysay What an amazingly looking orange crumb! Unfortunately I haven't dabbled in einkorn yet (but I had good einkorn&emmer breads a couple of times from a bakery, which I found really delicious). I also wish I could make such beautiful scoring patterns, but I'm restricted to rectangular loaves, since I don't have a proper oven...
By the way, my shipment of spelt flour arrived earlier than I anticipated, so this night I'll bake a spelt Mischbrot with half of my remaining rye flour. Seeing your photos, I should probably also have ordered some einkorn (and maybe emmer?) flour...
