You could change it up every day in sandwiches, toasties or wraps and add different sauces too.
Sweet chilli sauce, mayo, mustard or sriracha sauce.
You could also add a layer of vegan cream cheese or grated cheddar.

1 reg sized packet of tofu
Vegenaise
Brown mustard
Diced red onion
Diced cukes
Dill
Salt and pepper
Splash of red wine vinegar
Mash it up with a potato masher and it's ready to eat.
