Reading up on some other names for strutbräken, I just learned that Matteuccia struthiopteris, the ostrich or fiddlehead fern, is not just edible but a delicious early veg. Unlike other kinds of ferns, it keeps its spores off its fronds -- instead gathering them in the center, like you can see here -- which makes them tasty. I shall definitely try cooking some come spring.

The large, beautiful, green Ostrich Ferns, Matteuccia struthiopteris are one of my favorite wild, native ferns. Their tightly furled fronds are naturally beautiful. Fiddleheads are a delicacy and available only for a short time in spring. The fiddleheads can be boiled or steamed but my favorite is sauteing them in a little butter and fresh garlic.

Ostrich Fern (Matteuchia struthiopteris). The crosiers/fiddleheads are - according to the internet - edible, and I’ll be finding out if the internet is correct shortly. Initial impressions - really good. Tip tastes a bit like asparagus, the rachis is succulent and tastes like a green bean.

The #OstrichFern is a very large crown forming native #fern that grows to a height of 90 - 120 cm in forests and wet areas. It is one of the ferns that are #edible and spring is the time to get the #fiddleheads and fry them in a little butter and garlic, so good!
